 Mooli Ka Paratha, also known as Radish Paratha, is a delicious and nutritious Indian flatbread made with grated radish, spices, and whole wheat flour. Here's a recipe to prepare Mooli Ka Paratha:



Ingredients:

For the dough:

  • 2 cups whole wheat flour
  • Water, as needed
  • Salt, to taste

For the stuffing:

  • 2 medium-sized radishes (mooli), grated
  • 1 teaspoon ginger, grated
  • 1 green chili, finely chopped (optional)
  • 2 tablespoons chopped fresh coriander leaves
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • Salt, to taste

For cooking:

  • Ghee or oil, as needed

Instructions:

  1. In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a smooth and soft dough. Cover the dough and let it rest for about 15-20 minutes.

  2. Meanwhile, prepare the stuffing. In a separate bowl, combine the grated radish, grated ginger, chopped green chili (if using), chopped coriander leaves, cumin seeds, red chili powder, coriander powder, turmeric powder, and salt. Mix everything well, and let the mixture sit for 5 minutes. The salt will help release moisture from the radish.

  3. After 5 minutes, squeeze out any excess moisture from the radish mixture. This step is crucial to prevent the parathas from becoming soggy.

  4. Divide the dough into equal-sized portions and shape them into balls. Take one dough ball and flatten it slightly with your hands. Dust it with flour and roll it into a small circle of about 4-5 inches in diameter.

  5. Place a spoonful of the radish stuffing in the center of the rolled dough circle. Bring the edges of the dough together and seal the stuffing inside. Flatten the stuffed dough ball slightly and dust it with flour.

  6. Roll the stuffed dough ball gently using a rolling pin into a circular paratha of approximately 6-7 inches in diameter. Take care not to press too hard, as it may tear the paratha and cause the stuffing to spill out.

  7. Heat a tawa or griddle over medium heat. Place the rolled paratha on the hot tawa and cook it on one side until you see small bubbles forming on the surface.

  8. Flip the paratha and cook the other side. Apply ghee or oil on both sides of the paratha and cook until it turns golden brown and crispy.

  9. Repeat the process with the remaining dough and stuffing to make more parathas.

  10. Serve the Mooli Ka Paratha hot with yogurt, pickle, or any chutney of your choice.
