Mushroom Fry (Goan Style)

Ingredients:

  • 500 grams mushrooms, sliced
  • 1 onion, finely chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • 1 tablespoon vinegar or lime juice
  • 2 tablespoons fresh coriander leaves, chopped
  • Salt to taste
  • Oil for frying

For the marinade:

  • 2 tablespoons Goan Recheado masala paste (available in stores) OR
    • 1 teaspoon red chili powder
    • 1/2 teaspoon turmeric powder
    • 1 teaspoon vinegar or lime juice
    • Salt to taste

Instructions:

  1. In a bowl, prepare the marinade by mixing together the Goan Recheado masala paste (or the individual spices mentioned) along with vinegar or lime juice and salt.
  2. Add the sliced mushrooms to the marinade and toss well, ensuring each mushroom is coated. Let it marinate for at least 30 minutes.
  3. Heat oil in a frying pan or kadai over medium heat.
  4. Add the marinated mushrooms to the pan, spreading them out in a single layer. Fry in batches if necessary.
  5. Fry the mushrooms until they turn golden brown and crispy on both sides. Remove from the pan and set aside.
  6. In the same pan, add a little more oil if needed. Add the chopped onions and green chilies. Sauté until the onions turn translucent.
  7. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  8. Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well and cook for a couple of minutes.
  9. Return the fried mushrooms to the pan and toss them with the onion-spice mixture to coat evenly.
  10. Add garam masala powder and vinegar or lime juice. Mix well and cook for another 2-3 minutes.
  11. Finally, garnish with freshly chopped coriander leaves.
  12. Serve hot as a side dish or appetizer.
