For the Mushroom Balls: Ingredients:
- 250 grams mushrooms, finely chopped
- 1/2 cup all-purpose flour
- 2 tablespoons cornstarch
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon black pepper powder
- Salt to taste
- Oil for deep frying
Instructions:
- In a bowl, combine the finely chopped mushrooms, all-purpose flour, cornstarch, ginger-garlic paste, black pepper powder, and salt. Mix well until the mixture comes together to form a sticky dough.
- Shape the mixture into small balls or patties.
- Heat oil in a deep pan or kadai over medium heat.
- Deep fry the mushroom balls until they turn golden brown and crispy. Remove them from the oil and drain on a paper towel to remove excess oil. Set them aside.
For the Manchurian Sauce: Ingredients:
- 1 tablespoon oil
- 1 tablespoon ginger-garlic paste
- 1 onion, finely chopped
- 1 green bell pepper (capsicum), finely chopped
- 2 green chilies, slit
- 2 tablespoons soy sauce
- 1 tablespoon tomato ketchup
- 1 tablespoon chili sauce (adjust to taste)
- 1 tablespoon vinegar
- 1/2 teaspoon sugar
- Salt to taste
- 1/4 cup water
- 2 teaspoons cornstarch mixed with 2 tablespoons water (slurry)
- Chopped spring onions for garnishing
Instructions:
- Heat oil in a pan or wok over medium heat.
- Add the ginger-garlic paste and sauté for a minute until fragrant.
- Add the finely chopped onions, green bell pepper, and green chilies. Stir-fry for a few minutes until they become slightly tender.
- Add soy sauce, tomato ketchup, chili sauce, vinegar, sugar, and salt. Mix well to combine the sauces with the vegetables.
- In a separate bowl, mix the cornstarch with water to make a slurry.
- Pour the slurry into the pan and add water. Stir well and cook for a couple of minutes until the sauce thickens and becomes glossy.
- Add the fried mushroom balls to the pan and gently toss them in the sauce until they are coated evenly.
- Cook for another 2-3 minutes, allowing the mushroom balls to absorb the flavors of the sauce.
- Garnish with chopped spring onions.
- Remove from heat and serve the Mushroom Manchurian hot as an appetizer or with fried rice or noodles.
