Mushroom Manchurian

Mushroom Manchurian is a popular Indo-Chinese dish that features crispy fried mushrooms tossed in a tangy and spicy sauce. Here's a recipe to prepare Mushroom Manchurian:



For the Mushroom Balls: Ingredients:

  • 250 grams mushrooms, finely chopped
  • 1/2 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon black pepper powder
  • Salt to taste
  • Oil for deep frying

Instructions:

  1. In a bowl, combine the finely chopped mushrooms, all-purpose flour, cornstarch, ginger-garlic paste, black pepper powder, and salt. Mix well until the mixture comes together to form a sticky dough.
  2. Shape the mixture into small balls or patties.
  3. Heat oil in a deep pan or kadai over medium heat.
  4. Deep fry the mushroom balls until they turn golden brown and crispy. Remove them from the oil and drain on a paper towel to remove excess oil. Set them aside.

For the Manchurian Sauce: Ingredients:

  • 1 tablespoon oil
  • 1 tablespoon ginger-garlic paste
  • 1 onion, finely chopped
  • 1 green bell pepper (capsicum), finely chopped
  • 2 green chilies, slit
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato ketchup
  • 1 tablespoon chili sauce (adjust to taste)
  • 1 tablespoon vinegar
  • 1/2 teaspoon sugar
  • Salt to taste
  • 1/4 cup water
  • 2 teaspoons cornstarch mixed with 2 tablespoons water (slurry)
  • Chopped spring onions for garnishing

Instructions:

  1. Heat oil in a pan or wok over medium heat.
  2. Add the ginger-garlic paste and sauté for a minute until fragrant.
  3. Add the finely chopped onions, green bell pepper, and green chilies. Stir-fry for a few minutes until they become slightly tender.
  4. Add soy sauce, tomato ketchup, chili sauce, vinegar, sugar, and salt. Mix well to combine the sauces with the vegetables.
  5. In a separate bowl, mix the cornstarch with water to make a slurry.
  6. Pour the slurry into the pan and add water. Stir well and cook for a couple of minutes until the sauce thickens and becomes glossy.
  7. Add the fried mushroom balls to the pan and gently toss them in the sauce until they are coated evenly.
  8. Cook for another 2-3 minutes, allowing the mushroom balls to absorb the flavors of the sauce.
  9. Garnish with chopped spring onions.
  10. Remove from heat and serve the Mushroom Manchurian hot as an appetizer or with fried rice or noodles.
