Mushroom Masala | Mushroom Curry (Punjabi Style)

Ingredients:

  • 500 grams mushrooms, sliced
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • 1/4 cup fresh cream
  • 2 tablespoons oil or ghee (clarified butter)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil or ghee in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Add ginger-garlic paste and sauté for a minute until the raw smell goes away.
  5. Add chopped tomatoes and cook until they become soft and mushy.
  6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a couple of minutes.
  7. Add sliced mushrooms and mix everything together. Cook for about 5-7 minutes until the mushrooms are slightly tender.
  8. Add slit green chilies and garam masala powder. Stir fry for a few minutes to allow the flavors to meld together.
  9. Reduce the heat to low and add fresh cream. Mix well to combine.
  10. Simmer the curry for another 3-4 minutes until the flavors are well infused.
  11. Garnish with fresh coriander leaves.
  12. Serve hot with roti, naan, or rice.
