Ingredients:

  • 500 grams mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons butter
  • 4 cups vegetable or chicken broth

  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onions and minced garlic, and sauté until they become soft and translucent.

  2. Add the sliced mushrooms to the pot and cook for about 8-10 minutes, stirring occasionally, until they release their moisture and start to brown.

  3. Sprinkle the flour over the mushrooms and stir well to coat them evenly. Cook for another minute to cook off the raw flour taste.

  4. Slowly pour in the vegetable or chicken broth while stirring continuously to prevent lumps from forming. Bring the mixture to a boil.

  5. Reduce the heat to low and let the soup simmer for about 15-20 minutes to allow the flavors to meld together.

  6. Using an immersion blender or a regular blender, blend the soup until smooth and creamy. If using a regular blender, be sure to blend in batches and vent the blender lid to release steam.

  7. Return the soup to the pot and stir in the milk or heavy cream. Heat the soup gently over low heat, without boiling, for another 5 minutes. Season with salt and pepper to taste.

  8. If desired, garnish with fresh parsley or chives before serving.
