Ingredients:

  • 2 cups thinly sliced onions
  • 1 cup chickpea flour (besan)
  • 2 tablespoons rice flour
  • 1 teaspoon ginger-garlic paste
  • 1-2 green chilies, finely chopped (adjust to taste)
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Oil for deep frying
  • Fresh coriander leaves for garnish

Instructions:

  1. In a large mixing bowl, combine the sliced onions, chickpea flour, rice flour, ginger-garlic paste, chopped green chilies, red chili powder, turmeric powder, cumin seeds, asafoetida, and salt. Mix well to coat the onions evenly with the flour and spices.
  2. Gradually add a little water to the mixture and mix well to form a thick batter. The batter should coat the onions and bind them together.
  3. Heat oil for deep frying in a deep pan or kadai over medium heat.
  4. Once the oil is hot, take small portions of the onion batter and drop them into the hot oil. You can use your hands or a spoon to do this.
  5. Fry the pakodas until they turn golden brown and crispy. Fry them in batches, making sure not to overcrowd the pan.
  6. Remove the fried pakodas using a slotted spoon and drain excess oil on a paper towel.
  7. Repeat the process with the remaining batter until all the pakodas are fried.
  8. Garnish with freshly chopped coriander leaves.
  9. Serve the Onion Pakodas hot with mint chutney, tamarind chutney, or tomato ketchup.
