Ingredients:
- 500 grams boneless chicken, cut into small pieces
- 1 cup fresh coriander leaves
- 1/2 cup fresh mint leaves

- 2 tablespoons ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon chaat masala

- 1/2 teaspoon black pepper powder
- Juice of 1 lemon
- Salt to taste
- 2 tablespoons oil

Instructions:
In a blender or food processor, add fresh coriander leaves, fresh mint leaves, green chilies, ginger-garlic paste, cumin powder, coriander powder, chaat masala, turmeric powder, garam masala, black pepper powder, lemon juice, and salt. Blend everything into a fine paste. This is the marinade for the kebabs.
In a mixing bowl, combine the chicken pieces with the prepared marinade. Make sure all the chicken pieces are well-coated with the marinade. Cover the bowl and let the chicken marinate for at least 2 hours in the refrigerator. For the best flavors, marinating overnight is recommended.
Preheat your grill or preheat the oven to 200°C (400°F) if you're using an oven for cooking the kebabs.
If using skewers, thread the marinated chicken pieces onto them, leaving a small gap between each piece.
If grilling, brush the grill with oil to prevent sticking. Place the skewers on the grill and cook the kebabs, turning occasionally, until they are cooked through and have a nice charred exterior. This usually takes around 10-15 minutes, depending on the thickness of the chicken pieces.
If using an oven, line a baking tray with aluminum foil and place the marinated chicken pieces on it. Brush the kebabs with oil and bake them in the preheated oven for about 15-20 minutes, or until they are cooked through and browned.
