Palada Payasam

 Palada Payasam is a traditional South Indian dessert that is popularly served during festivals and special occasions. It is a sweet rice and milk pudding that is flavored with cardamom and garnished with nuts. Here's a recipe to make Palada Payasam:



Ingredients:

  • 1/2 cup palada (thin rice flakes)
  • 4 cups milk
  • 1 cup water
  • 3/4 cup sugar (adjust to taste)
  • 2 tablespoons ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • A handful of cashews and raisins for garnishing

Instructions:

  1. Heat ghee in a heavy-bottomed pan or a pressure cooker.
  2. Add cashews and raisins and fry until they turn golden brown. Remove them from the pan and set aside.
  3. In the same pan, add the palada (thin rice flakes) and roast them for a couple of minutes until they turn slightly golden.
  4. Add water to the pan and cook the palada until it becomes soft. If using a pressure cooker, cook for about 1 whistle.
  5. Once the palada is cooked, add milk to the pan and bring it to a boil. Reduce the heat and simmer for about 15-20 minutes, stirring occasionally.
  6. Add sugar to the pan and mix well until it dissolves completely.
  7. Continue to simmer the payasam until it thickens to your desired consistency. Keep in mind that the payasam will thicken further upon cooling, so adjust accordingly.
  8. Add cardamom powder and saffron strands (if using) and mix well.
  9. Remove the payasam from heat and garnish with the fried cashews and raisins.
  10. Serve the Palada Payasam warm or chilled as per your preference.
