Pav Bhaji Recipe – Mumbai Style

Sure! Here's a recipe for Mumbai-style Pav Bhaji that can be prepared on the stovetop or in an Instant Pot. Pav Bhaji is a popular street food dish in Mumbai, India, consisting of a spicy vegetable curry (bhaji) served with buttered pav buns.



Here are the ingredients you'll need:

For the Bhaji:

  • 2 large potatoes, boiled and mashed
  • 1 cup cauliflower florets, boiled and mashed
  • 1/2 cup green peas, boiled and mashed
  • 1/2 cup chopped bell peppers (capsicum)
  • 1/2 cup chopped onions
  • 1/4 cup chopped carrots
  • 2 tomatoes, finely chopped
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons pav bhaji masala
  • 1 tablespoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • Salt to taste
  • 2 tablespoons oil
  • 2 tablespoons butter
  • Water as needed
  • Chopped coriander leaves for garnishing
  • Lemon wedges for serving

For the Pav:

  • 8 pav buns
  • Butter for toasting

Stovetop Method:

  1. Heat oil in a large pan or kadhai over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until translucent. Then add minced garlic and grated ginger. Sauté for another minute.
  3. Add chopped bell peppers and carrots. Cook for 2-3 minutes until they soften slightly.
  4. Add the finely chopped tomatoes and cook until they turn mushy.
  5. Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for a minute.
  6. Add the boiled and mashed potatoes, cauliflower, green peas, and a little water. Mix everything together and mash the vegetables with the back of a spoon or a potato masher. Add more water if needed to achieve a thick, curry-like consistency.
  7. Let the bhaji simmer for 10-15 minutes, allowing the flavors to blend. Stir occasionally to prevent sticking.
  8. Once the bhaji is cooked, add butter and mix well. Garnish with chopped coriander leaves.

For the Pav:

  1. Slit the pav buns horizontally, without separating them fully.
  2. Heat a tawa or griddle over medium heat and add a little butter.
  3. Place the pav buns on the tawa and toast them until they turn golden brown and crisp on both sides.
  4. Remove the toasted pav from the tawa.

Serve the hot and spicy Pav Bhaji with the toasted pav buns, garnished with chopped coriander leaves and a squeeze of lemon juice. You can also serve some chopped onions and lemon wedges on the side.

Instant Pot Method:

  1. Set the Instant Pot to "Sauté" mode. Heat oil and add cumin seeds.
  2. Add chopped onions and sauté until translucent. Then add minced garlic and grated ginger. Sauté for another minute.
  3. Add chopped bell peppers and carrots. Cook for 2-3 minutes until they soften slightly.
  4. Add the finely chopped tomatoes, pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well.
  5. Add the boiled and mashed potatoes, cauliflower, green peas, and a little water. Mix everything together.
  6. Close the Instant Pot lid and set it to "Pressure Cook" mode for 5 minutes on high pressure.
  7. Once the cooking is complete, allow for a natural pressure
