Pinni - A hot, sweet hug from Punjab

 Here's a recipe to prepare Pinni, the hot and sweet hug from Punjab



Ingredients:

  • 1 cup wheat flour
  • 1 cup desi ghee (clarified butter)
  • 1 cup jaggery (grated or powdered)
  • 1/2 cup mixed nuts (almonds, pistachios, cashews), finely chopped
  • 1 teaspoon cardamom powder
  • 1/2 teaspoon cinnamon powder

Instructions:

  1. Heat a heavy-bottomed pan or kadai on medium heat. Add desi ghee to the pan and let it melt.
  2. Add the wheat flour to the melted ghee and mix well. Roast the flour in ghee, stirring continuously, until it turns golden brown. This process may take around 10-15 minutes. Be careful not to burn the flour.
  3. Once the flour turns golden brown and releases a nutty aroma, reduce the heat to low.
  4. Add the jaggery to the roasted flour and mix well. Continue stirring until the jaggery melts and forms a thick syrup with the flour. Make sure there are no lumps.
  5. Add the chopped nuts, cardamom powder, and cinnamon powder to the mixture. Mix everything together until well combined.
  6. Remove the pan from the heat and allow the mixture to cool slightly, so it's easier to handle.
  7. While the mixture is still warm, take small portions of it and shape them into round or oval-shaped balls. You can grease your hands with ghee to prevent sticking.
  8. Repeat the process with the remaining mixture until you have made all the Pinnis.
  9. Let the Pinnis cool completely and then store them in an airtight container.

Your Pinnis are now ready to be enjoyed! Serve them as a sweet snack or dessert, and savor the hot, sweet hug from Punjab.

Note: You can adjust the sweetness according to your preference by adding more or less jaggery. Also, feel free to customize the recipe by adding other ingredients like raisins or grated coconut for added flavor and texture.
