Potato Mushroom Kebabs

Ingredients:

  • 2 large potatoes, boiled and mashed
  • 200 grams mushrooms, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves
  • 2 tablespoons bread crumbs
  • 2 tablespoons corn flour (cornstarch)
  • Oil for frying

For serving (optional):

  • Mint chutney
  • Tamarind chutney
  • Sliced onions and tomatoes

Instructions:

  1. In a mixing bowl, combine the mashed potatoes, finely chopped mushrooms, onion, garlic, ginger, cumin powder, coriander powder, red chili powder, garam masala, salt, fresh coriander leaves, bread crumbs, and corn flour. Mix everything well until all the ingredients are evenly incorporated.

  2. Shape the mixture into small kebab patties or cylindrical shapes.

  3. Heat oil in a pan for shallow frying over medium heat.

  4. Once the oil is hot, carefully place the kebabs in the pan, making sure not to overcrowd it. Cook the kebabs on medium heat until they are golden brown and crispy on both sides.

  5. Remove the kebabs from the pan and place them on a paper towel to absorb any excess oil.
