Pyazi Kebabs prepare

Pyazi Kebabs, also known as Onion Kebabs, are crispy and flavorful vegetarian kebabs made primarily with onions and spices. Here's a recipe to prepare Pyazi Kebabs:

Ingredients:

  • 2 large onions, finely chopped
  • 1/2 cup besan (gram flour)
  • 2 tablespoons rice flour
  • 2 tablespoons chopped fresh coriander leaves
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for frying

For the batter:

  • 1/2 cup besan (gram flour)
  • 1/4 cup water
  • 1/2 teaspoon red chili powder
  • A pinch of turmeric powder
  • Salt to taste

Instructions:

  1. In a large mixing bowl, combine the finely chopped onions, besan, rice flour, chopped coriander leaves, green chilies, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Mix everything well until all the ingredients are evenly incorporated.

  2. Let the mixture rest for about 10-15 minutes. During this time, the onions will release moisture, which will help bind the kebabs.

  3. In the meantime, prepare the batter. In a separate bowl, combine besan, water, red chili powder, turmeric powder, and salt. Mix well to form a smooth batter without any lumps.

  4. Heat oil in a deep pan or kadai for frying over medium heat.

  5. Take a small portion of the onion mixture and shape it into a round or oval kebab. Dip the kebab into the prepared batter, ensuring it is coated evenly.

  6. Gently drop the coated kebab into the hot oil and fry until it turns golden brown and crispy. Fry a few kebabs at a time, depending on the size of your pan, to avoid overcrowding.

  7. Once the kebabs are cooked, remove them from the oil using a slotted spoon and place them on a paper towel to remove any excess oil.

  8. Repeat the process with the remaining onion mixture and batter until all the kebabs are fried.

  9. Serve the Pyazi Kebabs hot as an appetizer or snack. They can be enjoyed on their own or with mint chutney or ketchup.

These Pyazi Kebabs are crispy on the outside and have a delicious blend of flavors from the onions and spices. They make a great addition to any meal or as a party snack.
