Rajma Ke Kebab is a vegetarian kebab made with kidney beans (rajma) and a blend of aromatic spices. Here's a recipe for Rajma Ke Kebab:
Ingredients:
- 1 cup cooked rajma (kidney beans), drained
- 1/2 cup boiled and mashed potatoes
- 1/4 cup bread crumbs
- 1/4 cup finely chopped onions
- 2 green chilies, finely chopped
- 2 tablespoons chopped fresh coriander leaves
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Oil for shallow frying
For serving:
- Mint chutney
- Tamarind chutney
- Sliced onions and tomatoes
Instructions:
In a mixing bowl, mash the cooked rajma (kidney beans) using a fork or potato masher. The beans should be mashed but still have some texture.
Add the mashed potatoes, bread crumbs, finely chopped onions, green chilies, chopped coriander leaves, ginger-garlic paste, cumin powder, coriander powder, garam masala, red chili powder, and salt to the mashed rajma. Mix everything well until all the ingredients are evenly incorporated.
Shape the mixture into small kebab patties or cylindrical shapes.
Heat oil in a pan for shallow frying over medium heat.
Once the oil is hot, carefully place the kebabs in the pan, making sure not to overcrowd it. Cook the kebabs on medium heat until they are golden brown and crispy on both sides.
Remove the kebabs from the pan and place them on a paper towel to absorb any excess oil.
Serve the Rajma Ke Kebabs hot with mint chutney, tamarind chutney, sliced onions, and tomatoes if desired.
These Rajma Ke Kebabs are packed with the flavors of kidney beans and aromatic spices. They make a delicious and protein-rich vegetarian appetizer or can be enjoyed as a snack.
