Sarson Ka Paratha prepare

Sarson Ka Paratha, also known as Mustard Greens Paratha, is a traditional Punjabi flatbread made with a flavorful filling of mustard greens and spices. Here's a recipe to prepare Sarson Ka Paratha:



Ingredients:

For the dough:

  • 2 cups whole wheat flour
  • Water, as needed
  • Salt, to taste

For the stuffing:

  • 2 cups mustard greens (sarson), washed and finely chopped
  • 1 medium-sized onion, finely chopped
  • 2 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon ginger, grated
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder (optional)
  • Salt, to taste

For cooking:

  • Ghee or oil, as needed

Instructions:

  1. In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a smooth and soft dough. Cover the dough and let it rest for about 15-20 minutes.

  2. Meanwhile, prepare the stuffing. In a pan, heat a little oil or ghee over medium heat. Add cumin seeds and let them splutter.

  3. Add the finely chopped onions and sauté until they turn translucent. Then, add the grated ginger and minced garlic and sauté for a minute.

  4. Add the finely chopped mustard greens to the pan. Sauté the greens until they wilt and the moisture evaporates. This will take about 5-7 minutes. Make sure the greens are cooked well.

  5. Add the chopped green chilies, coriander powder, turmeric powder, red chili powder (if using), and salt. Mix everything well and cook for another minute. Remove the pan from heat and let the stuffing cool down.

  6. Divide the dough into equal-sized portions and shape them into balls. Take one dough ball and flatten it slightly with your hands. Dust it with flour and roll it into a small circle of about 4-5 inches in diameter.

  7. Place a spoonful of the mustard greens stuffing in the center of the rolled dough circle. Bring the edges of the dough together and seal the stuffing inside. Flatten the stuffed dough ball slightly and dust it with flour.

  8. Roll the stuffed dough ball gently using a rolling pin into a circular paratha of approximately 6-7 inches in diameter. Take care not to press too hard, as it may tear the paratha and cause the stuffing to spill out.

  9. Heat a tawa or griddle over medium heat. Place the rolled paratha on the hot tawa and cook it on one side until you see small bubbles forming on the surface.

  10. Flip the paratha and cook the other side. Apply ghee or oil on both sides of the paratha and cook until it turns golden brown and crispy.

  11. Repeat the process with the remaining dough and stuffing to make more parathas.

  12. Serve the Sarson Ka Paratha hot with yogurt, pickle, or any chutney of your choice.
