Here's a recipe for Seekh Kebabs, a popular Indian kebab variety made with minced meat and a blend of aromatic spices:
Ingredients:
- 500 grams minced meat (mutton or beef)
- 1 medium-sized onion, finely chopped
- 2 tablespoons ginger-garlic paste
- 2 green chilies, finely chopped
- 2 tablespoons chopped fresh coriander leaves
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1 teaspoon dried mango powder (amchur)
- 1 tablespoon gram flour (besan)
- Salt to taste
- 2 tablespoons oil
- Wooden skewers (soaked in water for 30 minutes)
- Lemon wedges and mint chutney for serving (optional)
Instructions:
In a mixing bowl, combine the minced meat, finely chopped onion, ginger-garlic paste, green chilies, chopped coriander leaves, red chili powder, coriander powder, cumin powder, garam masala, turmeric powder, dried mango powder, gram flour, and salt. Mix everything well until all the ingredients are evenly incorporated.
Cover the bowl and refrigerate the mixture for about 30 minutes to allow the flavors to meld together.
Preheat the grill or preheat the oven to 200°C (400°F) if you're using an oven for cooking the kebabs.
Take a small portion of the meat mixture and shape it around a wooden skewer, pressing gently to form a long cylindrical kebab. Repeat the process with the remaining mixture and skewers.
If using a grill, brush the kebabs with oil and place them on the preheated grill. Cook the kebabs, turning occasionally, until they are cooked through and have a charred exterior. This usually takes around 10-15 minutes, depending on the thickness of the kebabs.
If using an oven, line a baking tray with aluminum foil and place the kebabs on it. Brush the kebabs with oil and bake them in the preheated oven for about 15-20 minutes, or until they are cooked through and browned.
Once the kebabs are cooked, remove them from the grill or oven and let them cool slightly.
Carefully slide the kebabs off the skewers.
Serve the Seekh Kebabs hot with lemon wedges and mint chutney if desired.
Seekh Kebabs are perfect as an appetizer or as a part of a main course. They can be enjoyed with naan bread, roti, or rice. Enjoy the delicious flavors and the smoky aroma of these kebabs!
