Ingredients:
- 2 cups all-purpose flour
- 1/2 cup semolina (sooji/rava)
- 1/4 cup ghee (clarified butter)
- 1/2 cup powdered sugar
- 1/4 teaspoon cardamom powder
- Oil for deep frying
- Water, as needed
Instructions:
In a large mixing bowl, combine the all-purpose flour and semolina. Mix well.
Add the ghee to the flour mixture and rub it in with your fingertips until the mixture resembles breadcrumbs.
Gradually add water, a little at a time, and knead to form a firm dough. The dough should not be too soft or sticky.
Divide the dough into smaller portions and roll out each portion into a thin circle, about 1/4 inch thick.
Use a knife or a pizza cutter to cut the rolled-out dough into diamond or square shapes. You can make them as small or large as you like.
Heat oil in a deep frying pan or kadai over medium heat.
Carefully drop a few diamond-shaped dough pieces into the hot oil and fry until they turn golden brown and crispy. Fry them in batches, making sure not to overcrowd the pan.
Once fried, remove the shakkar para from the oil using a slotted spoon and drain them on a paper towel to remove excess oil.
Allow the shakkar para to cool for a few minutes.
In a separate bowl, mix powdered sugar and cardamom powder.
While the shakkar para is still warm, gently toss them in the powdered sugar mixture until they are well coated.
Repeat the process with the remaining fried dough pieces.
Allow the coated shakkar para to cool completely before storing them in an airtight container.
