Sweet Pongal, also known as Sakkarai Pongal, is a traditional South Indian dessert made with rice, lentils, jaggery (or sugar), and flavored with ghee and aromatic spices. It is often prepared during festivals and special occasions. Here's a recipe to prepare Sweet Pongal:
Ingredients:
- 1/2 cup raw rice
- 1/4 cup split yellow moong dal (lentils)
- 1 cup jaggery (or sugar)
- 3 cups water
- 1/2 cup milk
- 2 tablespoons ghee (clarified butter)
- 10-12 cashew nuts
- 1 tablespoon raisins
- 1/4 teaspoon cardamom powder
- A pinch of edible camphor (optional)
- A few strands of saffron (optional)
- A pinch of salt
Instructions:
- Rinse the rice and lentils together under cold water until the water runs clear. Drain and set aside.
- In a pressure cooker or large pot, add the rice, lentils, water, and milk. Pressure cook for 4-5 whistles or cook in a pot until the rice and lentils are soft and well-cooked. Mash the cooked rice and lentils lightly with a spoon or potato masher.
- In a separate pan, heat 1 tablespoon of ghee over medium heat. Add the cashew nuts and raisins. Sauté until the cashews turn golden brown and the raisins plump up. Remove them from the pan and set aside.
- In the same pan, add the jaggery (or sugar) and a little water. Heat until the jaggery melts and forms a syrup (or until the sugar dissolves completely). If using jaggery, strain the syrup to remove any impurities.
- Pour the jaggery (or sugar) syrup into the cooked rice and lentils. Mix well.
- In the same pan, heat the remaining 1 tablespoon of ghee. Add the cardamom powder and saffron strands (if using). Sauté for a few seconds to release the flavors.
- Pour this ghee mixture into the sweet pongal. Mix well to incorporate the flavors.
- Add a pinch of edible camphor (if using) and a pinch of salt. Mix again.
- Simmer the Sweet Pongal on low heat for a few minutes, allowing the flavors to meld together.
- Remove from heat and garnish with the sautéed cashew nuts and raisins.
- Serve the Sweet Pongal warm as a dessert or prasadam (offering). It can be enjoyed on its own or paired with a side of coconut slices or banana.
