Sure! Here's a recipe for Til Gud ke Ladoo (Sesame and Jaggery Ladoo):
Ingredients:
- 2 cups sesame seeds (white or black)
- 1 cup jaggery (grated or powdered)
- 1/2 teaspoon cardamom powder
- 2 tablespoons ghee (clarified butter)
- Chopped nuts (optional, for garnishing)
Instructions:
Dry roast the sesame seeds in a pan over medium heat until they turn light golden brown. Stir continuously to prevent burning. Once roasted, remove them from the pan and set aside to cool.
In the same pan, add the ghee and melt it over low heat.
Add the jaggery to the melted ghee and stir continuously until the jaggery melts and forms a syrup. Make sure the heat is low to prevent the jaggery from burning.
Once the jaggery syrup is ready, add the roasted sesame seeds and cardamom powder to the pan. Mix everything together until the sesame seeds are well coated with the jaggery syrup.
Turn off the heat and allow the mixture to cool slightly until it's comfortable to handle.
Grease your hands with a little ghee and take a small portion of the mixture in your hands. Shape it into a small round ball or ladoo. Repeat the process with the remaining mixture.
If desired, you can garnish the ladoos with some chopped nuts like almonds or cashews. Simply press a few chopped nuts onto the surface of each ladoo.
Let the til gud ke ladoos cool completely and firm up. You can also refrigerate them for a short while to help them set.
Once cooled and set, store the ladoos in an airtight container. They can be kept at room temperature for a couple of weeks.
These Til Gud ke Ladoos are a delightful and nutritious sweet treat, especially enjoyed during festivals like Makar Sankranti. The combination of sesame seeds and jaggery gives them a rich, earthy flavor. Enjoy!
