How to prepare vangi bath



Ingredients:

  • > 1 cup basmati rice
  • > 1 medium-sized brinjal (eggplant), cubed
  • > 1 onion, finely chopped
  • > 2 tomatoes, finely chopped
  • > 2 green chilies, slit lengthwise
  • > 1 teaspoon ginger-garlic paste
  • > 1 teaspoon mustard seeds
  • > 1 teaspoon cumin seeds
  • > A pinch of asafoetida (hing)
  • > Few curry leaves
  • > 2 tablespoons oil
  • > Salt to taste
  • > Coriander leaves for garnishing

For the Spice Blend:

  • > 2 tablespoons grated coconut
  • > 2 tablespoons roasted peanuts
  • > 2 teaspoons sesame seeds
  • > 1 teaspoon coriander seeds
  • > 1/2 teaspoon cumin seeds
  • > 1/2 teaspoon fennel seeds
  • > 2-3 dried red chilies
  • > 1/2 teaspoon turmeric powder

Instructions:

  1. 1. Wash the basmati rice thoroughly and cook it in 2 cups of water until it's fluffy. Once cooked, spread it on a plate and let it cool.

  2. 2. Dry roast the grated coconut, roasted peanuts, sesame seeds, coriander seeds, cumin seeds, fennel seeds, and dried red chilies until they turn slightly golden and aromatic. Allow them to cool.

  3. 3. Grind the roasted ingredients along with turmeric powder into a coarse powder. Set aside.

  4. 4. Heat oil in a pan or a kadai over medium heat. Add mustard seeds and let them splutter.
  5. Then add cumin seeds, asafoetida, and curry leaves. Stir for a few seconds.

  6. 5. Add the chopped onions and green chilies. Sauté until the onions turn translucent.

  7. 6. Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.

  8. 7. Add the cubed brinjal pieces and cook until they become tender and cooked through.

  9. 8. Now, add the chopped tomatoes and cook until they become mushy.

  10. 9. Add salt and the ground spice blend. Mix well and cook for 2-3 minutes to allow the flavors to meld together.

  11. 10. Finally, add the cooked rice to the pan and gently mix everything together, ensuring that the rice is coated with the spices evenly. Be careful not to break the rice grains.

  12. 11. Garnish with fresh coriander leaves.

  13. 12. Vangi Bath is ready to be served hot. It can be enjoyed on its own or with raita (yogurt sauce) or papadum.
