Kottu is a popular Sri Lankan street food dish made with shredded roti bread, vegetables, and spices. Here's a recipe for Vegetarian Kottu:
Ingredients:
- 4 roti bread (paratha or any other flatbread), shredded or chopped into small pieces
- 1 cup mixed vegetables (such as carrots, bell peppers, cabbage, and beans), thinly sliced
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1 green chili, finely chopped (adjust according to your spice preference)
- 1 tablespoon curry powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chili powder (adjust according to your spice preference)
- 2 tablespoons soy sauce
- 1 tablespoon ketchup
- 2 tablespoons oil
- Salt to taste
- Fresh cilantro leaves for garnish
- Lime wedges for serving
Instructions:
Heat oil in a large pan or skillet over medium heat. Add sliced onions and sauté until they become translucent.
Add minced garlic and chopped green chili to the pan. Sauté for another minute until the raw smell of garlic disappears.
Add the mixed vegetables to the pan and stir-fry for a few minutes until they start to soften.
Sprinkle curry powder, turmeric powder, and chili powder over the vegetables. Mix well to coat the vegetables with the spices.
Add the shredded or chopped roti bread to the pan and mix everything together. Use a spatula or two metal spatulas to chop and mix the ingredients together, breaking down the roti pieces. Continue chopping and mixing for about 5-7 minutes until the roti is well combined with the vegetables and spices.
Drizzle soy sauce and ketchup over the mixture and stir well to coat everything evenly. Cook for another 2-3 minutes, allowing the flavors to meld together.
Taste the kottu and add salt if needed, keeping in mind that soy sauce already adds some saltiness.
Remove the pan from heat and garnish the vegetarian kottu with fresh cilantro leaves.
Serve the kottu hot, squeezing some fresh lime juice over it for an extra tangy flavor.
