  • > 1 cup shredded cheddar or Monterey Jack cheese
  • > 1/2 cup diced onion
  • > 1/2 cup diced bell peppers (any color)
  • > 2 cloves garlic, minced
  • > 1 teaspoon ground cumin
  • > 1 teaspoon chili powder
  • > 1/2 teaspoon paprika
  • > Salt and pepper to taste
  • > 10-12 small flour tortillas (6-inch size)
  • > Vegetable oil, for frying
  • > Optional toppings: sour cream, guacamole, salsa, chopped cilantro, and lime wedges

Instructions:

  1. 1. In a large skillet, heat a little oil over medium heat. Add the diced onion and bell peppers, and sauté until they become soft and slightly caramelized, about 4-5 minutes.

  2. 2. Add the minced garlic, ground cumin, chili powder, paprika, salt, and pepper to the skillet.

  3. Stir well and cook for another 1-2 minutes until the spices become fragrant.

  4. 3. Add the shredded chicken to the skillet and mix everything together. Cook for a few more minutes, allowing the chicken to absorb the flavors from the spices and vegetables. Adjust seasoning if needed.

  5. 4. Remove the skillet from heat and let the chicken mixture cool down slightly.

  6. 5. Preheat your oven to 375°F (190°C).

  7. 6. Place about 2-3 tablespoons of the chicken mixture onto the center of each flour tortilla, and sprinkle some shredded cheese on top of the chicken.

  8. 7. Roll up the tortillas tightly into cigar-shaped cylinders, and secure them with toothpicks to prevent them from unrolling.

  9. 8. In a large skillet or frying pan, add enough vegetable oil to cover the flautas. Heat the oil over medium-high heat.

  10. 9. Carefully place the rolled-up flautas into the hot oil, seam side down. Fry them in batches for about 2-3 minutes per side or until they are golden and crispy. Use tongs to turn them for even frying.

  11. 10. Once the flautas are crispy and golden, remove them from the oil and place them on a plate lined with paper towels to drain any excess oil.

  12. 11. Serve the Chicken Flautas hot with your favorite toppings like sour cream, guacamole, salsa, chopped cilantro, and lime wedges.
