Instructions:
1. Marination:
- > In a large mixing bowl, combine the minced meat, chopped onions, ginger-garlic paste, raw papaya paste, green papaya, red chili powder, garam masala powder, roasted cumin powder, nutmeg, mace, cardamom, grated paneer, chopped coriander leaves, mint leaves, and salt.

2. Cooking:
- > Take the marinated mixture out of the refrigerator and let it sit at room temperature for about 10-15 minutes.
- > Preheat your grill or a non-stick pan on medium heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning.
- > Take a small portion of the marinated mixture and shape it into a flat, round kebab using your hands. You can also use moistened skewers to shape the kebabs.
- > If using a grill, brush it with some ghee or oil to prevent sticking. Place the kebabs on the grill or in the pan and cook them on medium heat.
- > Cook each side for about 2-3 minutes or until they turn golden brown. Baste the kebabs with some ghee or oil while cooking to keep them moist and flavorful.
- > Once the kebabs are cooked and have a beautiful charred appearance, remove them from the grill or pan.
3. Serving:
- > Serve the Galouti kebabs hot with mint chutney, sliced onions, and lemon wedges.
- > You can also serve them with roomali roti (thin Indian bread) or naan for a complete and delicious meal.
