How to prepare Mediterranean Chicken recipe


Ingredients:

  • > 4 boneless, skinless chicken breasts
  • > Salt and pepper to taste
  • > 2 tablespoons olive oil
  • > 4 cloves garlic, minced
  • > 1 teaspoon dried oregano
  • > 1 teaspoon dried basil
  • > 1 teaspoon dried thyme
  • > 1/2 teaspoon paprika
  • > 1/4 teaspoon red pepper flakes (optional, for a spicy kick)
  • > 1 lemon, zested and juiced
  • > 1/2 cup pitted Kalamata olives, halved
  • > 1/2 cup sun-dried tomatoes, chopped
  • > 1/4 cup crumbled feta cheese
  • > Chopped fresh parsley for garnish (optional)

Instructions:

  1. 1. Preheat your oven to 375°F (190°C).


  2. 2. Season the chicken breasts with salt and pepper on both sides.


  3. 3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side, or until they are browned. Remove the chicken from the skillet and set it aside on a plate.


  4. 4. In the same skillet, add the minced garlic, dried oregano, dried basil, dried thyme, paprika, and red pepper flakes (if using). Cook for about 1 minute until the spices become fragrant.


  5. 5. Add the lemon zest, lemon juice, Kalamata olives, and sun-dried tomatoes to the skillet. Stir well to combine all the ingredients.
