Mutton Shahi Roll Recipe
Ingredients:
For the Mutton Shahi:
- >> 500 grams mutton (goat meat), cut into small pieces
- >> 1 large onion, finely chopped
- >> 2 tomatoes, pureed
- >> 1 tablespoon ginger-garlic paste
- >> 1/2 cup yogurt
- >> 1/4 cup fresh cream
- >> 1/4 cup cashew nuts, soaked in warm water
- >> 1/4 cup milk
- >> 1 teaspoon cumin powder
- >> 1 teaspoon coriander powder
- >> 1/2 teaspoon turmeric powder
- >> 1 teaspoon garam masala
- >> 1/2 teaspoon red chili powder (adjust to your spice preference)
- >> 2 tablespoons ghee (clarified butter) or cooking oil
- >> Salt, to taste
- >> Fresh coriander leaves, chopped (for garnish)
For the Paratha (Flatbread):
- >> 2 cups whole wheat flour
- >> Water, as needed
- >> Salt, to taste
- >> Ghee or oil, for cooking the parathas
Instructions:
1. Heat ghee or oil in a heavy-bottomed pan or pressure cooker. Add chopped onions and sauté until they turn golden brown.
2. Add ginger-garlic paste and cook for a minute until the raw smell disappears.
3. Add the mutton pieces to the pan and cook on medium-high heat until they are browned on all sides.
4. Lower the heat and add the cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well to coat the mutton with the spices.
5. Pour in the tomato puree and cook until the tomatoes are cooked down, and the oil starts to separate from the masala.
6. In a blender, grind the soaked cashew nuts with milk into a smooth paste. Add this paste to the mutton and mix well.
7. Reduce the heat to low, cover the pan or pressure cooker, and let the mutton cook until it becomes tender and the flavors are well infused. If using a pressure cooker, cook for about 4-5 whistles or until the mutton is fully cooked.
8. Once the mutton is tender, stir in the yogurt and fresh cream. Cook for another 2-3 minutes, allowing the gravy to thicken slightly. Adjust salt and spices to taste.
9. Sprinkle garam masala and garnish with chopped coriander leaves. The Mutton Shahi is now ready.
For the Paratha (Flatbread):
1. In a mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead the mixture into a soft and smooth dough.
2. Divide the dough into small balls and roll each ball into a thin circle using a rolling pin.
3. Heat a tawa (flat griddle) or a non-stick pan over medium heat. Place the rolled paratha on the tawa and cook on both sides, spreading ghee or oil until golden brown spots appear.
Assembly:
1. Take a cooked paratha and place a generous amount of the Mutton Shahi in the center.
2. Roll the paratha tightly to form a Shahi Roll.
3. Serve the Mutton Shahi Roll hot and enjoy the royal flavors!
Note: You can add thinly sliced onions, cucumber, and mint chutney to the Mutton Shahi Roll for extra crunch and flavor. Additionally, you can adjust the spiciness and creaminess of the dish according to your taste preferences.
