How to prepare One-Pan Lemon Chicken & Orzo recipe


Ingredients:

  • > 4 boneless, skinless chicken breasts
  • > Salt and pepper to taste
  • > 2 tablespoons olive oil
  • > 1 onion, diced
  • > 3 cloves garlic, minced
  • > 1 cup uncooked orzo pasta
  • > 2 cups chicken broth
  • > 1 lemon, zested and juiced
  • > 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • > 1/2 cup grated Parmesan cheese
  • > Chopped fresh parsley for garnish (optional)

Instructions:

  1. 1. Season the chicken breasts with salt and pepper on both sides.


  2. 2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until they are cooked through and browned. Remove the chicken from the skillet and set it aside on a plate.


  3. 3. In the same skillet, add the diced onion and minced garlic. Cook for about 2-3 minutes until the onion becomes translucent and the garlic is fragrant.


  4. 4. Add the uncooked orzo pasta to the skillet and stir it with the onions and garlic, allowing it to toast for about a minute.


  5. 5. Pour in the chicken broth, lemon zest, lemon juice, and dried thyme. Stir well to combine all the ingredients.


  6. 6. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 10-12 minutes, or until the orzo is cooked and most of the liquid is absorbed. Stir occasionally to prevent sticking.
