- >> 2-3 tablespoons vegetable oil or ghee
- >> 1 teaspoon cumin seeds
- >> 4-5 green cardamom pods
- >> 4-5 cloves
- >> 2-inch cinnamon stick
- >> 1 bay leaf
- >> 1 teaspoon fennel seeds
- >> 1 teaspoon ground coriander
- >> 1 teaspoon ground cumin
- >> 1 teaspoon Kashmiri red chili powder (adjust to your spice preference)
- >> 1/2 teaspoon turmeric powder
- >> 1 teaspoon garam masala
- >> 1 cup water
- >> Salt to taste
- >> Fresh coriander leaves for garnish
Instructions:
1. Heat the oil or ghee in a heavy-bottomed pan or pressure cooker over medium heat.
2. Add the cumin seeds, green cardamom pods, cloves, cinnamon stick, bay leaf, and fennel seeds. Sauté for a minute or until the spices release their aroma.
3. Add the sliced onions and sauté until they turn golden brown.
4. Add the ginger-garlic paste and cook for another couple of minutes until the raw smell disappears.
5. Add the lamb pieces to the pan and brown them on all sides. This helps seal in the juices and enhances the flavor of the curry.
6. Lower the heat to medium and add ground coriander, ground cumin, Kashmiri red chili powder, turmeric powder, and salt. Stir well to coat the lamb with the spices.
