Ingredients:
- >> 500 grams mutton (goat meat), cut into pieces
- >> 2 onions, finely sliced
- >> 2 tomatoes, chopped
- >> 2 tablespoons ginger-garlic paste
- >> 1/4 cup yogurt
- >> 2 tablespoons lemon juice
- >> 1 teaspoon cumin powder
- >> 1 teaspoon coriander powder
- >> 1/2 teaspoon turmeric powder
- >> 1 teaspoon red chili powder (adjust to your spice preference)
- >> 1/2 teaspoon garam masala
- >> Salt, to taste
- >> Fresh coriander leaves, chopped (for garnish)
- >> Oil, for frying
Instructions:
1. Wash the mutton pieces thoroughly and drain the excess water. Pat them dry with a paper towel.
2. In a large mixing bowl, combine the mutton pieces with yogurt, half of the ginger-garlic paste, lemon juice, cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix everything well, ensuring the mutton pieces are evenly coated with the marinade. Cover the bowl and let it marinate for at least 2-3 hours, or preferably overnight in the refrigerator for best results.
3. In a deep frying pan or a heavy-bottomed skillet, heat enough oil to shallow fry the marinated mutton pieces. Once the oil is hot, add the mutton pieces in batches, making sure not to overcrowd the pan. Fry the mutton on medium-high heat until they turn brown and get cooked through. Remove the fried mutton pieces and place them on a plate lined with paper towels to absorb excess oil.
4. In a separate pan, heat a tablespoon of oil. Add the sliced onions and sauté them until they turn golden brown.
5. Add the remaining ginger-garlic paste to the pan with onions and cook for a minute until the raw smell disappears.
6. Now, add the chopped tomatoes to the pan and cook until they become soft and the oil starts to separate.
7. Put the fried mutton pieces back into the pan with the onion-tomato mixture and stir everything together gently, ensuring the mutton pieces are well coated with the masala.
8. Cover the pan and let the mutton cook for another 5-7 minutes on low heat, allowing the flavors to meld together.
9. Once the mutton is well-cooked and the masala has thickened, check for seasoning and adjust salt and spices if needed.
10. Garnish the Sindhi Mutton Fry with freshly chopped coriander leaves.
