Ingredients:

  • >> 500 grams mutton (goat meat), cut into pieces
  • >> 2 large onions, finely chopped
  • >> 2 tomatoes, chopped
  • >> 2 tablespoons ginger-garlic paste
  • >> 1/4 cup grated coconut
  • >> 1 teaspoon cumin seeds
  • >> 1 teaspoon coriander seeds
  • >> 1-inch piece of cinnamon
  • >> 3-4 cloves
  • >> 2-3 green cardamom pods
  • >> 1 bay leaf
  • >> 1/2 teaspoon turmeric powder
  • >> 1 teaspoon red chili powder (adjust to your spice preference)
  • >> 1 teaspoon garam masala
  • >> Salt, to taste
  • >> 2 tablespoons oil
  • >> Fresh coriander leaves, chopped (for garnish)
  • >> Water, as needed

Instructions:

  1. 1. Dry roast the cumin seeds, coriander seeds, cinnamon, cloves, and green cardamom pods in a pan over medium heat until they release their aroma. Let them cool down, and then grind them into a fine powder using a spice grinder or mortar and pestle. This is the Warli spice blend that will add unique flavors to the curry.


  2. 2. In the same pan, dry roast the grated coconut until it turns light brown. Let it cool, and then grind it into a smooth paste with a little water. This coconut paste will enrich the curry's texture and taste.


  3. 3. In a large pot or pressure cooker, heat the oil over medium heat. Add the chopped onions and sauté until they become translucent.


  4. 4. Add the ginger-garlic paste to the onions and cook for a couple of minutes until the raw smell disappears.


  5. 5. Add the mutton pieces to the pot and brown them on all sides.


  6. 6. Now, add the chopped tomatoes, turmeric powder, red chili powder, and the Warli spice blend (ground in step 1). Mix everything well and cook until the tomatoes turn soft and the oil starts to separate from the masala.


  7. 7. Pour enough water to cover the mutton pieces, and season with salt to taste. If using a pressure cooker, close the lid and cook the mutton until it becomes tender (around 4-5 whistles or as per the cooker's instructions). If using a regular pot, cover it with a lid and simmer until the mutton is fully cooked and tender.


  8. 8. Once the mutton is cooked, stir in the coconut paste and garam masala. Allow the curry to simmer for a few more minutes on low heat, letting the flavors meld together.


  9. 9. Check the seasoning and adjust salt and spices if needed.
