Ingredients:

  • >> 1 cup whole wheat (daliya)
  • >> 1 cup mixed lentils (masoor dal, chana dal, and moong dal), soaked for 1-2 hours
  • >> 500g mutton (goat or lamb), cut into pieces
  • >> 2 large onions, finely chopped
  • >> 2 tomatoes, finely chopped
  • >> 2 tablespoons ginger-garlic paste
  • >> 2-3 green chilies, slit (adjust to your spice preference)
  • >> 1 teaspoon cumin seeds
  • >> 1 teaspoon turmeric powder
  • >> 1 teaspoon red chili powder (adjust to your spice preference)
  • >> 1 teaspoon garam masala
  • >> 2 tablespoons vegetable oil or ghee
  • >> Salt to taste
  • >> Fresh coriander leaves for garnish
  • >> Crispy fried onions for garnish (optional)

Instructions:

  1. 1. Rinse the whole wheat (daliya) under cold water and soak it in water for about 30 minutes.


  2. 2. In a separate bowl, soak the mixed lentils (masoor dal, chana dal, and moong dal) in water for 1-2 hours.


  3. 3. In a large pot or pressure cooker, add the soaked lentils and whole wheat (daliya) along with 4-5 cups of water. Cook on medium-low heat until the lentils and wheat are soft and fully cooked. You can add more water if needed to achieve the desired consistency. You can also use a hand blender to partially blend the mixture to get a smoother texture.


  4. 4. In another pot or pressure cooker, heat vegetable oil or ghee over medium heat.


  5. 5. Add cumin seeds and let them splutter for a few seconds.


  6. 6. Add the chopped onions and sauté until they turn golden brown.


  7. 7. Add the ginger-garlic paste and cook for another couple of minutes until the raw smell disappears.


  8. 8. Add the mutton pieces to the pot and brown them on all sides. This will help seal in the juices and enhance the flavor of the khichda.


  9. 9. Lower the heat to medium and add turmeric powder, red chili powder, and salt. Stir well to coat the meat with the spices.


  10. 10. Pour in water and bring the mixture to a simmer. Cover the pot with a lid and let the mutton cook on medium-low heat until it becomes tender. If using a pressure cooker, cook the mutton for about 4-5 whistles or until tender.


  11. 11. Once the mutton is cooked, add the chopped tomatoes and green chilies. Cook until the tomatoes become soft and the oil starts to separate from the masala.


  12. 12. Add garam masala and mix it in.


  13. 13. Now, combine the cooked lentils and whole wheat mixture with the cooked mutton. Mix everything together.
