Ingredients:

- ➤3 ripe tomatoes, finely chopped
- ➤2 tablespoons vegetable oil or ghee (clarified butter)
- ➤1 tablespoon ginger-garlic paste (or 1-inch ginger and 4-5 garlic cloves, minced)
- ➤1/2 cup plain yogurt (Greek yogurt works well too)
- ➤2 tablespoons tomato paste (optional, for extra depth of flavor)
- ➤1/2 cup water or chicken broth
- ➤1/4 cup chopped cilantro (coriander leaves) for garnish
- ➤Salt to taste
For the spice blend (masala):
- ➤1 teaspoon cumin seeds
- ➤1 teaspoon coriander seeds
- ➤1 teaspoon fennel seeds
- ➤1-inch cinnamon stick
- ➤4-5 green cardamom pods
- ➤4-5 cloves
- ➤4-5 dried red chili peppers (adjust according to your spice preference)
- ➤1/2 teaspoon turmeric powder

Instructions:
1. Dry roast the cumin seeds, coriander seeds, fennel seeds, cinnamon stick, green cardamom pods, cloves, and dried red chili peppers in a pan over low heat until fragrant. Be careful not to burn the spices. Once roasted, let them cool, and then grind them into a fine powder using a spice grinder or mortar and pestle.
2. In a large skillet or pot, heat the vegetable oil or ghee over medium heat. Add the finely chopped onions and sauté until they turn golden brown.
