Egg Kulfi Recipe


Ingredients:

  • ➤4 large eggs
  • ➤1 liter full-fat milk
  • ➤1 cup sugar (adjust to taste)
  • ➤1/2 cup condensed milk
  • ➤1/2 teaspoon cardamom powder
  • ➤1/4 cup chopped nuts (e.g., almonds, pistachios, cashews)
  • ➤1/4 cup raisins (optional)
  • ➤A few saffron strands (soaked in 2 tablespoons of warm milk) - for flavor and color
  • ➤Kulfi molds or small cups

Instructions:

  1. 1. In a heavy-bottomed pan, bring the milk to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.



  2. 2. While the milk is heating, separate the egg yolks from the whites. In a separate bowl, whisk the egg yolks until they become smooth and creamy.



  3. 3. Once the milk comes to a boil, reduce the heat to low and let it simmer. Continue to cook the milk for about 30-40 minutes, stirring regularly until it reduces to approximately half its original volume. This process is essential to achieve the rich and creamy texture of the kulfi.



  4. 4. Add the sugar, condensed milk, and cardamom powder to the reduced milk. Mix well until the sugar dissolves completely.



  5. 5. Take a small amount of the hot milk mixture and slowly add it to the whisked egg yolks while continuously stirring. This step is called "tempering" and helps to avoid curdling of the eggs.



  6. 6. Now, slowly add the tempered egg yolk mixture back to the milk pan while stirring continuously. Keep the heat on low to prevent curdling.



  7. 7. Stir in the saffron-soaked milk, chopped nuts, and raisins (if using). Let the mixture cook for an additional 5-10 minutes, stirring continuously.



  8. 8. Remove the pan from the heat and let the kulfi mixture cool down to room temperature.



  9. 9. Once the kulfi mixture has cooled, pour it into the kulfi molds or small cups.



  10. 10. Cover the molds/cups with lids or aluminum foil and place them in the freezer. Let the egg kulfi freeze for at least 6-8 hours or overnight until it is fully set.



  11. 11. To serve, take the kulfi out of the freezer, let it sit at room temperature for a few minutes, and then gently unmold the kulfi. If using cups, you can serve the kulfi directly in them.
