Ingredients:

2 medium courgettes (zucchinis)

250g (about 8.8 oz) large prawns, peeled and deveined

3-4 cloves of garlic, minced

2 tablespoons olive oil

1 teaspoon lemon juice

1 teaspoon paprika

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)



Instructions:

➤Preheat the oven to 200°C (390°F).


➤Wash the courgettes and cut them in half lengthwise. Use a spoon to gently scoop out the center, creating "boats" for the filling. Leave about 1/4 inch of flesh around the edges. Chop the scooped-out flesh and set aside.


➤Heat 1 tablespoon of olive oil in a pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.


➤Add the chopped courgette flesh to the pan and cook for another 2-3 minutes until softened. Remove from heat and set aside.


➤In the same pan, add another tablespoon of olive oil. Add the prawns and cook for 2-3 minutes on each side until they turn pink and opaque.


➤Add the cooked courgette flesh back to the pan with the prawns. Sprinkle paprika, salt, and black pepper over the mixture. Sauté for an additional 2 minutes, allowing the flavors to combine.


➤Stir in the lemon juice and remove the pan from heat.


➤Place the courgette boats on a baking sheet lined with parchment paper or lightly greased. Spoon the prawn and courgette mixture evenly into the courgette boats.


➤Bake in the preheated oven for about 15-20 minutes, or until the courgettes are tender and the filling is heated through.


➤Once cooked, remove from the oven and garnish with freshly chopped parsley.


➤Serve the garlicky prawn courgette boats as a delicious appetizer or a light main dish. They can be enjoyed on their own or paired with a side salad or some crusty bread.
