Ingredients:


➤4 salmon fillets

➤1 cup fresh pineapple chunks or canned pineapple chunks (drained)

➤1/4 cup pineapple juice

➤2 tablespoons soy sauce

➤2 tablespoons honey

➤1 tablespoon olive oil

➤2 cloves garlic, minced

➤1 teaspoon grated fresh ginger

➤Salt and black pepper, to taste

➤Chopped fresh cilantro or parsley, for garnish



Instructions:


1. Preheat the Oven:

👉 Preheat your oven to 375°F (190°C).


2. Prepare the Marinade:

👉In a bowl, whisk together the pineapple juice, soy sauce, honey, olive oil, minced garlic, grated               ginger, salt, and black pepper. This will be your marinade and sauce.


3. Marinate the Salmon:

👉Place the salmon fillets in a shallow dish or a resealable plastic bag.

👉Pour half of the marinade over the salmon fillets, making sure they are coated. Reserve the other           half of the marinade for later use.

👉Marinate the salmon in the refrigerator for about 15-30 minutes. This allows the flavors to infuse           into the fish.


4. Prepare Pineapple:

👉If using fresh pineapple, peel and cut it into chunks. If using canned pineapple, make sure it's well-         drained.


5. Assemble the Dish:

👉Line a baking dish with parchment paper or lightly grease it.

👉Place the marinated salmon fillets in the baking dish.

👉Scatter the pineapple chunks around and on top of the salmon fillets.


6. Bake:

👉Bake the salmon in the preheated oven for about 15-20 minutes or until the salmon flakes easily             with a fork. Cooking time may vary based on the thickness of your salmon fillets.


7. Glaze the Salmon:

👉During the last 5 minutes of baking, brush the reserved marinade over the salmon fillets and                  pineapple chunks. This will create a nice glaze.


8.Garnish and Serve:

👉Once the salmon is cooked through and glazed, remove it from the oven.

👉Sprinkle chopped cilantro or parsley over the salmon for a fresh flavor and visual appeal.


9. Serve:

👉Carefully transfer the pineapple baked salmon fillets to serving plates.
