Ingredients:


For the Enchilada Sauce:


➤2 tablespoons vegetable oil

➤2 tablespoons all-purpose flour

➤2 tablespoons chili powder

➤1 teaspoon ground cumin

➤1/2 teaspoon garlic powder

➤1/2 teaspoon onion powder

➤1/4 teaspoon cayenne pepper (adjust to taste)

➤1/2 teaspoon dried oregano

➤2 cups chicken or vegetable broth

➤1 cup tomato sauce

➤Salt and pepper to taste


For the Prawn Filling:


➤1 pound large prawns, peeled and deveined

➤1 tablespoon olive oil

➤1 small onion, finely chopped

➤2 cloves garlic, minced

➤1 teaspoon ground cumin

➤1 teaspoon smoked paprika

➤Salt and pepper to taste

➤Juice of 1 lime


For the Enchiladas:


➤8 small flour tortillas

➤1 cup shredded Monterey Jack or cheddar cheese

➤Chopped fresh cilantro for garnish

➤Lime wedges for serving



Instructions:

1.  Prepare the Enchilada Sauce:

➨ In a medium saucepan, heat the vegetable oil over medium heat.

➨Add the flour and chili powder, and whisk continuously for 1-2 minutes until the mixture is fragrant      and slightly thickened.

➨Stir in the ground cumin, garlic powder, onion powder, cayenne pepper, and dried oregano.

➨Gradually whisk in the chicken or vegetable broth and tomato sauce. Continue whisking until the            sauce is smooth.

➨Simmer the sauce for about 10-15 minutes, stirring occasionally, until it thickens. Season with salt          and pepper to taste. Set aside.


2.  Prepare the Prawn Filling:

➨In a skillet, heat olive oil over medium heat.

➨Add chopped onion and cook until translucent.

➨Stir in minced garlic, ground cumin, and smoked paprika. Cook for another 1-2 minutes until                 fragrant.

➨Add the prawns and cook for 2-3 minutes per side, or until they turn pink and opaque.

➨Squeeze lime juice over the prawns and season with salt and pepper. Remove from heat.


3.  Assemble the Enchiladas:

➨Preheat your oven to 375°F (190°C).

➨Pour a small amount of enchilada sauce into the bottom of a baking dish.

➨Take a flour tortilla and spoon some prawn filling onto the center. Roll it up and place it seam side          down in the baking dish. Repeat with the remaining tortillas and filling.

➨Pour the remaining enchilada sauce over the rolled tortillas, spreading it evenly.

➨Sprinkle shredded cheese over the top.


4.  Bake the Enchiladas:

➨Cover the baking dish with aluminum foil and bake in the preheated oven for about 20 minutes, or          until the cheese is melted and bubbly.


5.  Serve:

➨Remove from the oven and let it cool slightly before serving.

➨Garnish with chopped cilantro and serve with lime wedges.
