Ingredients:


➤  1 pound (about 450g) large prawns, peeled and deveined

➤  2 tablespoons olive oil

➤  2 tablespoons lime juice

➤  2 cloves garlic, minced

➤  1 teaspoon chili powder

➤  1/2 teaspoon cumin powder

➤  1/2 teaspoon paprika

➤  1/4 teaspoon cayenne pepper (adjust to your spice preference)

➤  Salt and pepper to taste

➤  1 large onion, thinly sliced

➤  1 large bell pepper (any color), thinly sliced

➤  8 small flour tortillas or corn tortillas

➤  Optional toppings: shredded cheese, sour cream, guacamole, salsa, chopped cilantro, and lime wedges



Instructions:


1. In a large bowl, combine the prawns with olive oil, lime juice, minced garlic, chili powder, cumin powder, paprika, cayenne pepper, salt, and pepper. Toss the prawns in the marinade until they are well coated. Cover the bowl with plastic wrap and let the prawns marinate in the refrigerator for about 15-30 minutes.


2. While the prawns are marinating, prepare the sliced onions and bell peppers.


3. Heat a large skillet or grill pan over medium-high heat. If using a grill pan, you can lightly brush it with some additional olive oil to prevent sticking.


4. Once the pan is hot, add the marinated prawns in a single layer. Cook the prawns for about 2-3 minutes on each side until they turn pink and are cooked through. Be careful not to overcook them to maintain their tenderness.


5. Remove the cooked prawns from the pan and set them aside.


6. In the same pan, add a little more olive oil if needed, and sauté the sliced onions and bell peppers until they become tender and slightly charred around the edges.


7. Warm the tortillas in a separate pan or microwave according to the package instructions.


8. To serve, place some sautéed peppers and onions on a warm tortilla, top with the cooked prawns, and add any desired toppings such as shredded cheese, sour cream, guacamole, salsa, chopped cilantro, and a squeeze of lime juice.


9. Fold the tortilla over the filling to form a fajita and enjoy!
