Ingredients:


➤1 cup cooked and chilled white rice (preferably day-old)

➤1/2 pound prawns, peeled and deveined

➤2 eggs, lightly beaten

➤1 cup mixed vegetables (peas, carrots, corn, and diced bell peppers)

➤1 small onion, finely chopped

➤3 cloves garlic, minced

➤2 tablespoons soy sauce

➤1 tablespoon oyster sauce

➤1 teaspoon sesame oil

➤1/2 teaspoon ground black pepper

➤2 tablespoons vegetable oil (for cooking)

➤Optional: chopped green onions or cilantro for garnish




Instructions:


1. Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil.


2. Add the beaten eggs to the skillet and scramble them until they're fully cooked. Remove the                   scrambled eggs from the skillet and set them aside.


3. In the same skillet, add another tablespoon of vegetable oil if needed. Add the chopped onion and          minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.


4. Add the prawns to the skillet and cook them for about 2-3 minutes until they turn pink and opaque.        Remove the prawns from the skillet and set them aside.


5. Add the mixed vegetables to the skillet and stir-fry for a few minutes until they are slightly tender.


6. Push the vegetables to the side of the skillet and add the chilled rice to the other side. Break up any        clumps of rice with a spatula and let the rice heat through.


7. Add the cooked prawns and scrambled eggs back into the skillet with the rice and vegetables.


8. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and ground black pepper.


9. Pour the sauce mixture over the rice and ingredients in the skillet. Stir-fry everything together,               ensuring that the sauce is evenly distributed and coats all the ingredients.


10. Continue to cook and stir-fry for a few more minutes until everything is heated through and well            combined.


11. Taste and adjust the seasoning, adding more soy sauce or pepper if desired.


12. Once everything is well mixed and heated, remove the skillet from the heat.


13. Garnish with chopped green onions or cilantro if desired.


14. Serve the Prawn Fried Rice hot as a delicious and satisfying meal.
