➤Vegetable oil for frying

For the Coating:

➤1/2 cup all-purpose flour

➤1/2 teaspoon salt

➤1/4 teaspoon paprika

➤1/4 teaspoon garlic powder

➤1 tablespoon Dijon mustard

➤1 tablespoon pickle relish

➤1 teaspoon hot sauce (adjust to taste)

➤1 teaspoon lemon juice

➤1/2 teaspoon paprika

➤Salt and pepper to taste

Instructions:

1. Prepare the Remoulade Sauce:

➔In a bowl, combine all the remoulade sauce ingredients. Mix well until everything is thoroughly             combined. Adjust seasoning to taste. Cover and refrigerate until ready to serve.

2. Prep the Catfish:

➔Pat the catfish fillets dry with paper towels. Season both sides with salt and pepper.

3. Prepare the Coating:

➔In a shallow dish, combine the flour, salt, paprika, garlic powder, and onion powder for the coating.

4. Coat the Catfish:

➔Dredge each catfish fillet in the seasoned flour mixture, shaking off any excess.

5. Dip in Egg Mixture:

➔Dip the floured catfish fillets into the beaten eggs, making sure they're fully coated.

6. Coat with Breadcrumbs:

➔Coat the catfish fillets with breadcrumbs or panko, pressing the breadcrumbs onto the fish to adhere.

7. Heat the Oil:

➔In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F           (175°C).

8. Fry the Catfish:

➔Carefully place the coated catfish fillets into the hot oil. Fry for about 3-4 minutes per side, or until       they're golden brown and cooked through. Be mindful not to overcrowd the skillet; you may need to       fry in batches.

➔Use a slotted spoon to remove the fried catfish fillets from the oil and place them on a plate lined            with paper towels to drain excess oil. Let them rest for a minute.
