Ingredients:


For the Potato Salad:

➤2 pounds red potatoes, scrubbed and cut into bite-sized cubes

➤1/2 cup black olives, sliced

➤1/2 cup roasted red peppers, chopped

➤1/2 cup marinated artichoke hearts, chopped

➤1/2 cup salami, diced

➤1/4 cup red onion, finely chopped

➤1/4 cup fresh parsley, chopped

➤1/4 cup grated Parmesan cheese

➤Salt and black pepper, to taste


For the Dressing:

➤1/2 cup mayonnaise

➤2 tablespoons red wine vinegar

➤1 clove garlic, minced

➤1 teaspoon Dijon mustard

➤1/2 teaspoon dried oregano

➤Salt and black pepper, to taste




Instructions:


1. Place the cubed red potatoes in a large pot and cover them with cold water. Add a pinch of salt to the      water.


2. Bring the water to a boil, then reduce the heat and simmer the potatoes for about 10-15 minutes or          until they are fork-tender but still firm.


3. Drain the cooked potatoes and let them cool to room temperature.


4. In a large mixing bowl, combine the cooled potatoes, black olives, roasted red peppers, marinated           artichoke hearts, diced salami, red onion, and chopped parsley.


5. In a separate bowl, whisk together the mayonnaise, red wine vinegar, minced garlic, Dijon mustard,        dried oregano, salt, and black pepper to make the dressing.


6. Pour the dressing over the potato salad ingredients in the large bowl.


7. Gently toss everything together until the potatoes and other ingredients are well coated with the              dressing.


8. Sprinkle grated Parmesan cheese over the top of the salad and gently mix it in.


9. Taste the salad and adjust the seasoning with more salt and black pepper if needed.


10. Cover the Antipasto Potato Salad and refrigerate it for at least 1 hour before serving. Chilling                 allows   the flavors to meld together.


11. Serve the potato salad chilled as a side dish at your next picnic, barbecue, or family gathering.
