Ingredients:


For the Artichoke Custards:


➤2 large artichokes

➤4 large eggs

➤1 cup heavy cream

➤1/2 cup whole milk

➤1/2 cup grated Parmesan cheese

➤1/4 cup grated Pecorino Romano cheese

➤2 cloves garlic, minced

➤1 tablespoon fresh lemon juice

➤Salt and black pepper to taste


For the Fava Bean Sauce:


➤1 1/2 cups shelled fresh or frozen fava beans

➤1/4 cup fresh basil leaves

➤1/4 cup fresh mint leaves

➤2 cloves garlic, minced

➤1/4 cup extra-virgin olive oil

➤Salt and black pepper to taste


Instructions:


For the Artichoke Custards:


1. Prepare the Artichokes:

➤Trim the top third of the artichokes and remove the tough outer leaves.

➤Trim the stem to about 1 inch.

➤Cut the artichokes in half lengthwise and scoop out the choke (the hairy part).


2. Blanch the Artichokes:

➤Fill a large saucepan with water and bring it to a boil.

➤Add the artichoke halves and boil for about 10-15 minutes until they are tender.

➤Drain and let them cool.

➤Once cooled, slice the artichokes thinly.


3. Make the Custard:

➤Preheat your oven to 325°F (160°C).

➤In a bowl, whisk together the eggs, heavy cream, whole milk, grated Parmesan cheese, grated                Pecorino Romano cheese, minced garlic, lemon juice, salt, and black pepper.

➤Place the sliced artichokes into the bottom of individual ramekins or a single baking dish.

➤Pour the custard mixture over the artichokes.


4. Bake:

➤Place the ramekins or baking dish in a larger baking dish. Fill the larger dish with hot water until it       comes halfway up the sides of the ramekins.

➤Bake in the preheated oven for about 35-40 minutes or until the custards are set.


For the Fava Bean Sauce:


1. Prepare the Fava Beans:

➤If using fresh fava beans, blanch them in boiling water for a few minutes, then transfer them to ice          water to stop the cooking.

➤Remove the tough outer skins to reveal the bright green beans.


2. Make the Sauce:

➤In a food processor, combine the fava beans, fresh basil, fresh mint, minced garlic, extra-virgin olive     oil, salt, and black pepper.

➤Process until the sauce is smooth.


To Serve:


➤Once the artichoke custards are done, let them cool slightly.

➤Serve the custards with a drizzle of the fava bean sauce on top.
