Ingredients:

➤4 large artichokes

➤2 lemons, sliced

➤Salt, for seasoning


For the Smoked-Herb Mayonnaise:

➤1 cup mayonnaise

➤2 tablespoons fresh herbs (such as chives, parsley, and dill), finely chopped

➤1 teaspoon smoked paprika

➤1 teaspoon lemon juice

➤Salt and pepper, to taste


Instructions:


For the Artichokes:


1. Fill a large pot with water and bring it to a boil.


2. While the water is heating, trim the artichokes. Cut off the top third of each artichoke and trim the sharp tips of the remaining leaves.


3. Rub the cut sides of the artichokes with a lemon slice to prevent them from browning.


4. Once the water is boiling, add the artichokes and lemon slices. Season the water with salt.


5. Cook the artichokes for about 25-40 minutes, or until the leaves can be easily pulled off. The cooking time will vary based on the size of the artichokes.


6. Drain the artichokes and let them cool slightly.
