Ingredients:


For the artichoke hearts:

➤6-8 whole artichokes

➤1 lemon, cut in half

➤2 cups water

➤Salt and pepper to taste


For the stuffing:

➤1/2 cup pitted green olives, chopped

➤1/4 cup fresh parsley, finely chopped

➤2 tablespoons fresh basil, finely chopped

➤2 cloves garlic, minced

➤1/4 cup grated Parmesan cheese

➤2 tablespoons olive oil

➤Salt and pepper to taste


For braising:

➤1 cup vegetable or chicken broth

➤1/4 cup white wine (optional)

➤2 tablespoons olive oil

➤2 cloves garlic, minced

➤Salt and pepper to taste


Instructions:


1. Prepare the artichokes:

➧Trim the stem of each artichoke so they sit flat.

➧Remove the tough outer leaves.

➧Cut off the top third of each artichoke and trim the spiky tips from the remaining leaves.

➧Rub the cut surfaces with the lemon halves to prevent discoloration.

➧Scoop out the choke (the hairy part) from the center of each artichoke using a spoon or a knife.


2. Prepare the stuffing:

➧In a bowl, combine the chopped olives, parsley, basil, minced garlic, grated Parmesan cheese, olive        oil, and season with salt and pepper. Mix well.


3. Stuff the artichoke hearts:

➧Carefully spread the leaves of each artichoke apart.

➧Stuff the olive and herb mixture between the leaves of each artichoke.


4. Braise the artichoke hearts:

➧In a large, deep skillet or Dutch oven, heat 2 tablespoons of olive oil over medium heat.

➧Add the minced garlic and cook for about 1 minute until fragrant.

➧Place the stuffed artichoke hearts in the skillet.

➧Add the vegetable or chicken broth and white wine (if using).

➧Season with salt and pepper.

➧Cover the skillet and let the artichokes simmer on medium-low heat for about 30-40 minutes, or until     the artichoke hearts are tender and the leaves can be easily pulled off.


5. Serve:

➧Once the artichoke hearts are tender, remove them from the skillet and place them on a serving platter.

➧Drizzle some of the braising liquid over the artichokes before serving.
