➤1 pound (about 450 grams) of carrots, peeled and chopped into small pieces

➤1 medium onion, finely chopped

➤2-3 cloves of garlic, minced

➤1-inch piece of fresh ginger, grated

➤4 cups vegetable broth or water

➤2 tablespoons olive oil or butter

➤Salt and black pepper, to taste

➤1/2 teaspoon ground cumin (optional)

➤1/2 teaspoon ground coriander (optional)

➤A pinch of cayenne pepper or red pepper flakes (optional, for added heat)

➤1/2 cup coconut milk or heavy cream (optional, for a creamy texture)

➤Fresh cilantro or parsley, for garnish (optional)



Instructions:


1. Heat the oil or butter:

➤In a large pot, heat the olive oil or butter over medium heat.


2. Sauté the onions and garlic:

➤Add the finely chopped onion and minced garlic to the pot. Sauté for a few minutes until the onions       become translucent and fragrant.


3.Add ginger and spices:

➤Add the grated ginger and, if using, the ground cumin, ground coriander, and cayenne pepper. Sauté     for another minute or so to release the flavors.


4. Add carrots and broth:

➤Add the chopped carrots to the pot and pour in the vegetable broth or water. Bring the mixture to a          boil.

➤Using an immersion blender, carefully blend the soup directly in the pot until it becomes smooth and     creamy. Alternatively, you can transfer the soup in batches to a blender, but be cautious with hot             liquids.


7. Season and finish:

➤Season the soup with salt and black pepper to taste. Adjust the seasoning as needed. If you prefer a        creamier texture, you can add coconut milk or heavy cream at this stage.


8. Heat through:

➤Heat the soup on low heat for an additional 5 minutes, stirring occasionally.


9. Serve:
