Ingredients:


For the dough:

➤2 cups whole wheat flour (atta)

➤Water for kneading

➤Salt, to taste


For the carrot filling:

➤2-3 medium-sized carrots, grated

➤1 small onion, finely chopped (optional)

➤1-2 green chilies, finely chopped (adjust to your spice preference)

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon red chili powder (adjust to taste)

➤1/2 teaspoon turmeric powder

➤1/2 teaspoon garam masala

➤Salt, to taste

➤2 tablespoons chopped coriander leaves

➤1-2 tablespoons oil or ghee for cooking


Instructions:


1. Prepare the dough:

➤In a large mixing bowl, add the whole wheat flour and a pinch of salt. Gradually add water and              knead  it into a smooth, soft dough. Cover the dough with a damp cloth and let it rest for 20-30                minutes.


2. Prepare the carrot filling:

➤In a separate bowl, combine the grated carrots, finely chopped onions (if using), green chilies, cumin     seeds, red chili powder, turmeric powder, garam masala, salt, and chopped coriander leaves. Mix            everything well.


3. Make carrot parathas:

➤Divide the dough into equal-sized portions and roll them into balls, roughly the size of a lemon.

➤Take one dough ball and flatten it slightly to create a small disc.

➤Using a rolling pin, roll it out into a small circle, about 6 inches in diameter.

➤Place a portion of the carrot filling in the center of the rolled-out dough.

➤Gather the edges of the dough to cover the filling and seal it properly, creating a stuffed ball.

➤Flatten the stuffed ball gently with your fingers.


4. Roll out the stuffed dough ball:

➤Carefully roll out the stuffed dough ball into a larger circle, about 8-9 inches in diameter. Be gentle        while rolling to avoid the filling from spilling out.


5. Cook the carrot paratha:

➤Heat a griddle or a flat pan over medium-high heat.

➤Place the rolled carrot paratha on the hot griddle and cook one side until small bubbles start to                appear, then flip it.

➤Brush some oil or ghee on the surface of the paratha and cook until both sides are golden brown and     crispy.


6. Repeat the process:

➤Repeat the same process for the remaining dough balls and carrot filling.


7. Serve:

➤Serve hot carrot parathas with yogurt, pickles, or any chutney of your choice.
