Ingredients:


➤1 cup basmati rice (or any long-grain rice)

➤2 cups water

➤2 cups grated carrots

➤1 onion, finely chopped

➤2-3 green chilies, slit lengthwise (adjust to your spice preference)

➤1/2 teaspoon mustard seeds

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon urad dal (split black gram)

➤1/2 teaspoon chana dal (split chickpeas)

➤8-10 curry leaves

➤1/4 teaspoon turmeric powder

➤1/2 teaspoon red chili powder (adjust to taste)

➤1/2 teaspoon garam masala

➤Salt, to taste

➤2 tablespoons cooking oil or ghee

➤Fresh coriander leaves for garnish (optional)


Instructions:


1. Cook the rice:

➤Wash the rice thoroughly and cook it with 2 cups of water until it's fluffy and the grains are separate. You can use a rice cooker or cook it on the stovetop. Once done, fluff the rice with a fork and let it cool.


2. Grate the carrots:

➤Grate the carrots and set them aside.


3. Prepare the carrot rice:

➤In a large pan or skillet, heat oil or ghee over medium heat.


4. Tempering:

➤Add mustard seeds and let them splutter.

➤Add cumin seeds, urad dal, and chana dal. Sauté until the dals turn golden brown.


5. Add onions and chilies:

➤Add the finely chopped onions and slit green chilies. Sauté until the onions become translucent.


6. Add grated carrots:

➤Add the grated carrots to the pan and cook for 4-5 minutes, stirring occasionally, until the carrots soften.


7. Spice it up:

➤Add turmeric powder, red chili powder, garam masala, and salt. Mix well and sauté for a couple of minutes to combine the flavors.


8. Mix with rice:

➤Add the cooked and cooled rice to the pan. Gently mix everything together until the rice is well-            coated with the carrot and spice mixture. Be gentle to avoid breaking the rice grains.


9. Garnish:

➤Garnish with fresh coriander leaves if desired.


10. Serve:

➤Carrot rice is ready to serve. It pairs well with raita (yogurt side dish) or pickle.
