Nonna's Artichokes recipe

 Nonna's Artichokes, or artichokes prepared in a traditional Italian style, are a delicious and classic dish. Here's a recipe that mimics the way many Italian grandmothers (nonnas) prepare this tasty vegetable:

Ingredients:


➤4-6 large globe artichokes

➤2-3 lemons (for lemon juice and rubbing cut surfaces)

➤4 cloves garlic, minced

➤1/2 cup fresh parsley, finely chopped

➤1/2 cup fresh basil, finely chopped

➤1/2 cup breadcrumbs (Italian-style, if available)

➤1/4 cup grated Parmesan cheese

➤1/4 cup extra-virgin olive oil

➤Salt and pepper to taste



Instructions:


1. Prepare the artichokes:

➤Start by trimming the stem of each artichoke, leaving about an inch attached.

➤Remove any tough outer leaves until you reach the tender, pale green leaves.

➤Cut off the top third of each artichoke and trim the spiky tips from the remaining leaves.

➤Rub the cut surfaces with lemon to prevent browning.


2. Make the stuffing:

➤In a bowl, combine minced garlic, chopped parsley, chopped basil, breadcrumbs, grated Parmesan          cheese, and extra-virgin olive oil. Season with salt and pepper.


3. Stuff the artichokes:

➤Gently spread the leaves of each artichoke apart.

➤Stuff the breadcrumb mixture between the leaves of each artichoke.


4. Prepare for cooking:

➤Place the stuffed artichokes in a large pot or a Dutch oven.

➤Squeeze the juice of a lemon over the top of the artichokes.

➤Add a few lemon halves to the pot for extra flavor.

➤Drizzle with a little more olive oil.


5. Cook the artichokes:

➤Add water to the pot until it reaches about 1/4 of the way up the artichokes.

➤Cover the pot and simmer over low to medium heat for about 45 minutes to 1 hour. You can tell              they're done when the leaves pull away easily.


6. Serve:

➤Remove the artichokes from the pot and place them on a serving platter.

➤Optionally, you can drizzle some of the cooking liquid over the artichokes before serving.
