Ingredients:


For the Paneer:


➧ 250g (about 9 ounces) paneer, cut into cubes

➧ 2 tablespoons oil, for frying


For the Spinach Sauce (Saag):


➧500g (about 1 pound) fresh spinach leaves, washed and chopped

➧2 tablespoons ghee or butter

➧1 large onion, finely chopped

➧3-4 cloves garlic, minced

➧1-inch piece of ginger, grated

➧2-3 green chilies, chopped (adjust to your spice preference)

➧1 teaspoon cumin seeds

➧1 teaspoon ground coriander

➧1/2 teaspoon ground turmeric

➧1/2 teaspoon garam masala

➧1/2 teaspoon red chili powder (adjust to your spice preference)

➧Salt to taste

➧1/2 cup heavy cream or yogurt (optional)

➧Lemon juice, for garnish (optional)




Instructions:


Preparing the Paneer:

1. Heat 2 tablespoons of oil in a non-stick pan over medium-high heat.

2. Add the paneer cubes and fry them until they turn golden brown on all sides. Remove them from the pan and place them on a plate lined with paper towels to drain excess oil.


Preparing the Spinach Sauce (Saag):

1. In a large pot of boiling water, blanch the chopped spinach leaves for 2-3 minutes. Then, drain and transfer the spinach to a bowl of ice water to retain their green color. Drain again.


2. Blend the blanched spinach in a food processor or blender until you get a smooth puree. Set aside.


3. In a separate large skillet or pan, heat the ghee or butter over medium heat.


4. Add the cumin seeds and allow them to sizzle for a few seconds.


5. Add the chopped onions, green chilies, minced garlic, and grated ginger. Sauté until the onions turn translucent and aromatic.


6. Stir in the ground coriander, ground turmeric, garam masala, and red chili powder. Cook for another 1-2 minutes to toast the spices.


7. Add the spinach puree and cook for about 5-7 minutes, stirring occasionally, until the mixture thickens and the spinach is well cooked.


8. If using heavy cream or yogurt for added creaminess, stir it into the spinach mixture and cook for an additional 2-3 minutes.


9. Add the fried paneer cubes to the spinach sauce and simmer for 2-3 minutes until they absorb the flavors and become tender. If the sauce is too thick, you can add a little water to achieve your desired consistency.


10. Season with salt and taste to adjust the seasoning as needed.


Serving:


1. Transfer the Saag Paneer to a serving dish.

2. Garnish with a drizzle of lemon juice for a burst of freshness (optional).

3. Serve hot with naan, roti, or steamed rice.
