Ingredients:


For the main dish:

➤2 cups of potatoes (aloo), peeled and diced

➤1 cup of carrots (gajar), peeled and diced

➤1 cup of green peas (matar), fresh or frozen

➤1 large onion, finely chopped

➤2 tomatoes, finely chopped

➤2-3 cloves of garlic, minced

➤1-inch piece of ginger, grated

➤2-3 green chilies, slit lengthwise (adjust to your spice preference)

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon turmeric powder

➤1 teaspoon cumin powder

➤1 teaspoon coriander powder

➤1/2 teaspoon red chili powder (adjust to taste)

➤1/2 teaspoon garam masala

➤Salt, to taste

➤2-3 tablespoons cooking oil or ghee

➤Fresh cilantro leaves for garnish


Instructions:


1. Heat oil or ghee:

➤Heat cooking oil or ghee in a large, heavy-bottomed pan or kadai over medium heat.


2. Temper:

➤Add cumin seeds and let them splutter.


3. Sauté the aromatics:

➤Add minced garlic, grated ginger, and green chilies. Sauté for a minute or until they release their           aroma.


4. Add onions:

➤Add the finely chopped onions and cook until they become translucent.


5. Add tomatoes:

➤Add the chopped tomatoes and cook until they soften and the oil starts to separate.


6. Spice it up:

➤Add turmeric powder, cumin powder, coriander powder, red chili powder, garam masala, and salt.          Mix well and cook for a few minutes to blend the spices.


7. Add vegetables:

➤Add the diced potatoes, carrots, and green peas. Stir to coat the vegetables with the spice mixture.


8. Cook on low heat:

➤Reduce the heat to low, cover the pan, and let the vegetables cook for about 20-25 minutes or until         they are tender. Stir occasionally to prevent sticking and burning. If needed, you can add a little water     to help with the cooking.


9. Garnish:

➤Once the vegetables are cooked and the gravy has thickened, garnish with fresh cilantro leaves.


10. Serve:

Aloo Gajar Matar is ready to be served hot with roti, naan, or rice.
