Ingredients:

➤2-3 cloves of garlic, minced
➤1-inch piece of ginger, grated
➤2-3 green chilies, slit lengthwise (adjust to your spice preference)
➤1/2 teaspoon cumin seeds
➤1/2 teaspoon turmeric powder
➤1 teaspoon cumin powder
➤1 teaspoon coriander powder
➤1/2 teaspoon red chili powder (adjust to taste)
➤1/2 teaspoon garam masala
➤Salt, to taste
➤2-3 tablespoons cooking oil or ghee
➤Fresh cilantro leaves for garnish

1. Heat oil or ghee:
➤Heat cooking oil or ghee in a large, heavy-bottomed pan or kadai over medium heat.
2. Temper:
➤Add cumin seeds and let them splutter.
3. Sauté the aromatics:
➤Add minced garlic, grated ginger, and green chilies. Sauté for a minute or until they release their aroma.
4. Add onions:
➤Add the finely chopped onions and cook until they become translucent.
5. Add tomatoes:
➤Add the chopped tomatoes and cook until they soften and the oil starts to separate.
