Ingredients:


For the Crispy Noodles: 

➤200 grams of egg noodles or hakka noodles

➤Oil for deep frying


For the Chopsuey Sauce:

➤2 tablespoons of oil

➤1 small onion, finely chopped

➤1 small green bell pepper (capsicum), finely chopped

➤1 small red bell pepper (capsicum), finely chopped

➤1 small carrot, thinly sliced

➤1/2 cup of cabbage, thinly sliced

➤1/2 cup of boiled and shredded chicken or diced tofu for a vegetarian version (optional)

➤2-3 cloves of garlic, minced

➤1 teaspoon of ginger, minced

➤2-3 green chilies, finely chopped (adjust to your spice preference)

➤2 tablespoons of soy sauce

➤2 tablespoons of tomato ketchup

➤1 tablespoon of chili sauce (adjust to your spice preference)

➤1 tablespoon of vinegar

➤1/2 teaspoon of sugar

➤Salt to taste

➤1 cup of water

➤1 tablespoon of cornstarch mixed with 2 tablespoons of water to make a slurry


For Garnish:

➤Chopped spring onions or green onions

➤Tomato ketchup



Instructions:


For the Crispy Noodles:

1. Cook the egg noodles according to the package instructions until they are al dente.

2. Drain the cooked noodles and let them cool.

3. Heat oil in a deep frying pan or wok over medium-high heat.

4. Carefully add a portion of the cooked noodles to the hot oil. Fry until they turn crispy and golden            brown. Remove them with a slotted spoon and drain on paper towels. Repeat with the remaining            noodles.



For the Chopsuey Sauce:

1. In a separate pan, heat 2 tablespoons of oil over medium heat.

2. Add minced garlic, ginger, and green chilies. Sauté for a minute until they become fragrant.

3. Add the chopped onion and sauté until it turns translucent.

4. Add the finely chopped green and red bell peppers, sliced carrots, and cabbage. Sauté for a few             minutes until the vegetables become slightly tender.

5. If using chicken or tofu, add it to the vegetables and cook until it's cooked through.

6. In a separate bowl, mix together soy sauce, tomato ketchup, chili sauce, vinegar, sugar, and salt. Add      this sauce mixture to the pan and mix well.

7. Add 1 cup of water and bring it to a simmer. Cook for a few minutes.

8. Stir in the cornstarch slurry to thicken the sauce. Cook until the sauce reaches your desired                      consistency.



Assembling:

1. To serve, place a portion of the crispy noodles on a plate.

2. Pour the prepared Chopsuey sauce on top of the noodles.

3. Garnish with chopped spring onions or green onions.

4. Serve hot with a side of tomato ketchup.
