➤A handful of chopped nuts (cashews, almonds, and pistachios)
➤A pinch of saffron strands (optional)
➤1-2 tablespoons khoya (mawa) or condensed milk (optional)
➤A few strands of saffron for garnish (optional)
Instructions:
1. Wash, peel, and grate the beetroots using a fine grater.
2. In a heavy-bottomed pan, heat 2 tablespoons of ghee over medium heat.
3. Add the grated beetroot to the pan and sauté for a few minutes. Cook the beetroot until it becomes soft and loses its raw smell. Stir occasionally.
4. In a separate pan, heat the milk over low to medium heat. You can add a pinch of saffron strands to the milk to infuse flavor and color. Let the milk simmer until it reduces to about half its original volume, stirring occasionally.
5. Once the milk has reduced, add it to the pan with the cooked beetroot and stir well.
6. Continue to cook the mixture over low heat, allowing the beetroot to absorb the milk. Keep stirring to prevent sticking or burning.
7. After the beetroot has absorbed most of the milk and the mixture thickens, add the sugar and continue to cook. The sugar will release some moisture, so keep stirring.
8. You can also add khoya (mawa) or condensed milk at this stage if you prefer a richer and creamier texture.
9. Cook until the halwa reaches your desired consistency. It should be soft, and the ghee should start to separate from the mixture.
10. Add cardamom powder and mix well.
11. In a separate small pan, roast the chopped nuts in ghee until they turn golden. You can also add these nuts to the halwa or use them as a garnish.
12. Garnish the beetroot halwa with saffron strands or more chopped nuts if desired.
