Beetroot Paratha

 Ingredients:


For the dough:

➤ 2 cups whole wheat flour

➤ 1 cup grated beetroot

➤ Salt to taste

➤ Water, as needed


For the filling:

➤ 1 cup grated beetroot

➤ 1 teaspoon oil

➤ 1/2 teaspoon cumin seeds

➤ 1/2 teaspoon grated ginger

➤ 1/2 teaspoon garam masala

➤ Salt to taste

➤ Fresh coriander leaves, chopped (optional)




Instructions:


1. Prepare the Dough:

a. In a large mixing bowl, combine the whole wheat flour, grated beetroot, and salt.

b. Gradually add water and knead the mixture into a soft and smooth dough.

c. Cover the dough with a damp cloth and let it rest for 15-20 minutes.


2. Prepare the Filling:

a. Heat oil in a pan over medium heat.

b. Add cumin seeds and let them splutter.

c. Add grated ginger and sauté for a minute.

d. Add grated beetroot, garam masala, and salt. Cook until the beetroot is soft and any excess moisture evaporates.

e. Add chopped coriander leaves if using, and mix well. Allow the filling to cool.


3. Make the Parathas:

a. Divide the rested dough into equal-sized portions and roll them into balls.

b. Take one dough ball, flatten it, and roll it into a small disc.

c. Place a spoonful of the beetroot filling in the center of the disc.

d. Bring the edges of the disc together, sealing the filling inside, and roll it into a ball again.

e. Flatten the ball and roll it out into a paratha of your desired thickness.


4. Cook the Parathas:

a. Heat a tawa or skillet over medium heat.

b. Place the rolled paratha on the hot tawa and cook for 1-2 minutes until small bubbles appear.

c. Flip the paratha and apply a little oil or ghee on the cooked side.

d. Flip again and apply oil or ghee on the other side.

e. Cook until both sides are golden brown and cooked through.


5. Repeat:

a. Repeat the process for the remaining dough and filling.


6. Serve:

a. Serve the beetroot parathas hot with yogurt, pickle, or any side of your choice.
